Crispy Black Bean Quesadillas
Smashed black beans, corn and pepper jack, folded in a tortilla and crisped in a skillet. Lunch in ten minutes.

Method
Smash the beansMash half the beans with a fork and stir in the whole beans, corn, cumin, cilantro and a pinch of salt.
FillCover half of each tortilla with cheese, then the bean mixture, then a little more cheese. Fold over.
CrispBrush a skillet with oil. Cook each quesadilla over medium heat 2 to 3 minutes per side until golden and the cheese is melted.
ServeCut into wedges and serve with salsa and sour cream.
