Baked Chicken Parmesan
Crisp breadcrumb cutlets under marinara and melted mozzarella, baked rather than fried.

Method
Prep the chickenHeat the oven to 425°F. Pound the cutlets to an even ½-inch thickness and season with salt and pepper.
BreadMix the panko, Parmesan, oregano and oil. Dredge each cutlet in flour, then egg, then the crumb mixture, pressing to coat.
BakePlace on a rack set over a sheet pan and bake 15 minutes, until golden.
TopSpoon marinara over each cutlet, add the mozzarella, and bake 8 to 10 minutes until bubbly and the chicken reaches 165°F.
ServeScatter with basil. Good over spaghetti or with a green salad.
