Pan-Seared Pesto Gnocchi

Shelf-stable gnocchi browned in butter, tossed with pesto and burst cherry tomatoes. Crisp outside, soft inside.

Ingredients

Method

  1. SearMelt the butter in a large skillet over medium-high heat. Add the gnocchi straight from the package in a single layer and cook 6 to 8 minutes, turning, until golden and crisp.

  2. TomatoesAdd the tomatoes and garlic for 3 minutes until blistered and starting to burst.

  3. TossOff the heat, stir in the pesto and a spoonful of water to loosen it.

  4. ServeTop with Parmesan and basil.

Editor’s tip. Do not boil the gnocchi first. Searing them from the package gives the crisp crust.
