Sheet-Pan Breakfast Hash
Crispy potatoes, peppers and sausage roasted on one pan, with eggs baked right in the wells.
Ingredients
Tick them off as you go. Quantities are for 4 servings.
Method
Roast the potatoesHeat the oven to 425°F. Toss the potatoes with 2 tbsp oil, paprika and salt on a large sheet pan. Roast 15 minutes.
Add the restStir in the sausage, pepper, onion and remaining oil. Roast 12 minutes more, until the potatoes are crisp.
Add the eggsMake four wells in the hash and crack an egg into each. Bake 5 to 7 minutes until the whites are set.
ServeSeason the eggs with salt and pepper and scatter with chives.
