Chewy Chocolate Chip Cookies

Crisp edges, a soft chewy middle and pools of chocolate. Browned butter and a rest in the fridge do the work.

Ingredients

Method

  1. Brown the butterMelt the butter in a light-colored pan over medium heat, swirling, until it smells nutty and has golden-brown flecks, 5 to 7 minutes. Pour into a bowl and cool 15 minutes.

  2. MixWhisk both sugars into the butter, then the eggs and vanilla. Stir in the flour, baking soda and salt until just combined. Fold in the chocolate.

  3. ChillCover and refrigerate at least 1 hour, or up to 48 hours.

  4. BakeHeat the oven to 350°F. Scoop 2-tablespoon balls onto lined sheets 2 inches apart. Bake 10 to 12 minutes until the edges are set and the centers still look slightly underdone.

  5. CoolRest on the pan 5 minutes before moving.

Editor’s tip. Bang the pan on the counter once as the cookies come out. It deflates them into the chewy, rippled shape.
