Classic Lattice Apple Pie

Tender-tart apples in a cinnamon filling under a flaky all-butter lattice crust.

Ingredients

Method

  1. Make the doughPulse the flour, salt and butter until pea-sized pieces remain. Add ice water a spoonful at a time until the dough just holds together. Divide in two, flatten, and chill 1 hour.

  2. FillingToss the apples with the sugar, cornstarch, cinnamon and lemon juice. Let them sit 15 minutes.

  3. AssembleRoll one disk to fit a 9-inch pie plate and fill with the apples. Roll the second disk, cut into strips and weave a lattice. Trim, crimp the edge, brush with egg and sprinkle with coarse sugar.

  4. BakeBake at 425°F for 20 minutes, then reduce to 375°F and bake 40 to 45 minutes more until golden and the filling bubbles. Cover the edges with foil if they brown too fast.

  5. CoolCool at least 3 hours so the filling sets before slicing.

Editor’s tip. Use a mix of apples: Granny Smith for tartness and structure, Honeycrisp for sweetness.
