Tall, golden, layered biscuits made with grated cold butter and a few quick folds.

Ingredients

Method

  1. HeatHeat the oven to 450°F.

  2. Cut inWhisk the dry ingredients. Toss in the grated butter with your fingertips until pea-sized.

  3. Mix and foldStir in the buttermilk until shaggy. Turn out, pat to 1 inch thick, fold in thirds twice, and pat to 1 inch again.

  4. Cut and bakeCut with a floured 2½-inch cutter without twisting. Place touching on a sheet pan, brush with butter, and bake 13 to 15 minutes.

Editor’s tip. Do not twist the cutter. Twisting seals the edges and stops the biscuits from rising tall.
