Loaded Breakfast Burritos
Scrambled eggs, crispy potatoes, black beans and cheese in a big flour tortilla. They freeze beautifully.
Ingredients

Method
Crisp the potatoesCook the potatoes in 1 tbsp oil in a large skillet over medium-high heat for 10 minutes, stirring now and then, until browned and tender. Season with salt and cumin.
Cook the eggsSoften the onion in the remaining oil for 2 minutes. Pour in the beaten eggs and scramble gently until just set.
Warm the tortillasHeat each tortilla for 15 seconds per side in a dry pan so it folds without cracking.
RollLayer eggs, potatoes, beans, cheese and salsa down the center. Fold in the sides and roll tightly.
Serve or freezeEat right away, or wrap each burrito in foil and freeze up to 2 months. Reheat from frozen in a 350°F oven for 30 minutes.
